This March I tried doing a 30 Days of Matcha Challenge. I meant to post this recipe a few weeks ago, but I’m still adjusting to mom life and juggling my time. We are just beginning to figure out nap time, and I try to get the laundry and dishes done every once in a while. Tips anyone?
The 30 Days of Matcha Challenge has made me experiment with different ways to enjoy matcha. This is a classic recipe that I have enjoyed for a while already. It makes the most delicious, energizing, and refreshing summer beverage.
Here I used the Perfect Matcha Scoop which is equivalent to about 1/2 teaspoon. This little scoop is handy to have stashed in my tea cupboard, and it makes it easy to quickly scoop the right amount of tea for my cup of matcha.
For a pitcher of Matcha Lemonade I use a can of frozen lemonade concentrate and Lemonatcha Matcha.
I start by mixing up the lemonade in my pitcher (alternatively you can use fresh lemonade as well, but I find the concentrate tastes great mixed with tea and is a better bang for your buck!). Then I pour some lemonade into my shaker and add 6 scoops of matcha (about 3 teaspoons). I shake it well to mix and dissolve the matcha, and then I add it back to the pitcher. Finally, I give it all a quick stir, and it’s ready to serve!
This recipe is simple and would be great to try with different flavours. I’m thinking Sweet Strawberry Matcha lemonade would be delicious. You could also switch out the lemonade for limeade.

This Peppermint Dark Chocolate Matcha Bark is delicious you guys. I concocted the recipe for a craft show I attended in November. This was definitely my top-seller, and after I had sold out my sister snatched up the rest of the samples as payment for manning my booth while I shopped. I meant to share this recipe a while back, but unfortunately I missed the window before Christmas. Either way it’s a tasty treat anytime of the year and makes a great little gift. You can omit the candy cane sprinkles and it is still beautiful and delicious.
If you don’t know much about matcha, it’s a delicious superfood that has become trendy in the last few years. Matcha is high quality green tea that is ground into a powder. It is typically mixed with hot (but not boiling) water and the whole of the leaf is consumed. This is what makes it a superfood! All the antioxidants found in green tea are concentrated in a matcha beverage as you drink the whole leaf rather than just steeping it. For this recipe I’m using Steeped Tea Peppermint Matcha and stirring it into the melted chocolate. This matcha already comes blended with natural peppermint flavour. You could almost consider this healthy… almost.
Start by lining a baking sheet with wax or parchment paper. This will make your bark easier to break up once it’s hardened. With this amount of chocolate I used 2 or 3 baking sheets.
Melt your dark chocolate and white chocolate in separate bowls over steaming water. Alternatively, you can microwave your chocolate in small increments and stir in between. Be careful not to burn or overcook your chocolate which could make it dry out and affect the texture.
Whisk the matcha into the white chocolate using a sifter to remove any clumps.
Pour a thin layer of dark chocolate into the baking sheet, spreading to the edges.
Drizzle the peppermint matcha white chocolate over the dark chocolate in thin strips. Make sure to get as close to the edges as possible.
Use a knife to draw the white chocolate into the dark chocolate. I made a chevron pattern by drawing a straight line length-wise and then drawing the next line about an inch apart in the opposite direction.
Add the candy cane sprinkles now if desired.
Wait overnight until the chocolate is set or place in the fridge for an hour to speed up the process. Break it into pieces using your hands or a sharp knife. The lines will also help your bark to break in straighter pieces.

We have now entered December! I hope you are getting all sorts of Christmas vibes. It’s day 2 of my Steeped Tea advent Calendar; it was a treat to enjoy a mug of Maraschino Cherry Black Tea this morning. It’s getting me all warmed up for the holidays.
Next week I’ve planned a Christmas cookie baking day with my mom. I expect I’ll go home with many goodies – yum yum! Good thing you won’t be able to tell how much Christmas baking I’ve eaten this season by the size of my belly.
I’m wishing for snow, but I keep seeing wet, dreary rain out my window. Next week might bring a change in the weather; in the meanwhile I don’t mind enjoying hot tea and baking inside.
For Jordan and I the Christmas music season started early this year. We’ve been hard at work recording a soon to be classic family Christmas album. Today is the day we are sharing it with all of you! It has been a long process, beginning with years of dreaming, writing, and recording, but I am so proud of Jordan and all the work he has put into this project along with his band Forest Creatures.
Listen closely and you can even hear me singing on a couple songs. I was Jordan’s assistant during the recording and producing phase, meaning I pushed some buttons and made some suggestions. This project is my little baby almost as much as it is his.

This album will certainly make our family Christmas traditions special. It is really cool that our kids will grow up singing along to Daddy’s songs every December.
When we were first married, Jordan and I began a tradition of building a blanket fort in the living room on Christmas Eve, watching a Christmas movie, and then sleeping in it. I’m not sure if I’ll want to sleep in the fort this year with my extra big belly, but I look forward to carrying on this tradition (at least in part) with our kiddos.
